Quality Meat Scotland: Meat the Market Beef Workshop – Dunbia Highland Meats

Book

Farmers are invited to attend a practical workshop that will demonstrate the key handling points and the factors that need to be considered when selecting livestock for slaughter.

This practical event will be run with a very small group of farmers who will get to assess the stock in the lairage and then see the same stock on the hook in the chiller to see exactly how the grading process works. The event will be specific to beef and will cover market specifications, carcase grading, and presentation to maximise returns to the farmer.

Following cattle through processing on the same day will give an excellent insight into the whole process. The chance to being able to compare the assessments from the same live animal with the carcase on the hook will help cattle selection back home on the farm.

Lunch will be provided.

Those wishing to attend must book in advance, bring a form of ID like a passport or driving licence and be over 18. Numbers are strictly limited so early booking is essential.

Please note that there will be no phones or photography allowed in the abattoir and it is not permitted to wear make-up or jewellery, with the exception of a wedding band, during the workshop.
